For thirty days, the town's restaurants dedicate their menus to this dish, recognized with Denominazione Comunale (De.Co.), a mark that certifies the deep link between a recipe and its territory. The review, organized by the Rovato Trade District, attracts enthusiasts and curious visitors from all over Lombardy.

The traditional recipe

Manzo all'Olio is a braised dish that cooks slowly in olive oil with anchovies, capers, breadcrumbs, and herbs, until it becomes very tender.
