On Saturday, November 1st, 2025, Rocca Sinibalda renewed its appointment with autumn. From 1:00 PM, the stalls set up in Piazza della Vittoria began serving frascarelli, the white flour polenta topped with the classic onion, celery, and carrot sauce, enriched with sausage and finished with grated cheese.

Accompanying the town's signature dish, as per tradition, were roasted chestnuts, wine from local producers, and music in the square. The day, organized by the Pro Loco of Rocca Sinibalda with free admission, attracted visitors from the Rieti area and the Roman region, thanks to the village's location just over an hour from Rome and the opportunity to combine lunch with a visit to the castle and the views over the Turano Valley.
