Roma Baccalà

The sixth edition of Roma Baccalà was held from September 18 to 21, 2025, at Parco Schuster, on Via Ostiense, in Rome's San Paolo district. The event became part of the Artes et Jubilaeum jubilee calendar, highlighting the link between salt cod, the food of pilgrims, and the nearby Basilica of Saint Paul Outside the Walls.

Every evening, from 6:00 PM to 10:00 PM, the Teatro dello Scambio and the new Spazio Capasanta hosted show cooking, talks, and meetings: from the opening talk Baccalà Democratico to comparative tastings of Vicenza-style salt cod, stockfish, and Northern European traditions, up to the show cooking by the Norwegian Embassy. Numerous Roman taverns reinterpreted salt cod in a contemporary key, while the guest area of the Calabria Region offered Mammola stockfish and guided tastings by chef Riccardo Sculli. There was no shortage of shows and workshops for children, with free admission.
