The historic Carnival soup of the small Valsesia village
In the small municipality of Rassa, nestled among the woods and mountains of the Valsesia in the Province of Vercelli (Piedmont), Carnival has an unmistakable scent: that of burning wood and the Paniccia simmering slowly in large cauldrons. It is a rich and hearty soup prepared with potatoes, carrots, celery, cabbage, beans, pasta, and secret ingredients jealously guarded by the village cooks.
The Paniccia is more than just a dish: it is an act of charity with roots in a centuries-old past. As in many Valsesian villages, the soup was originally cooked to feed the needy, and it still retains its generous spirit today. In Rassa, preparation begins as early as 5:30 AM, while it is still dark, with the lighting of the first fires under the large pots. After long hours of cooking, the Paniccia is distributed for free to the villagers and offered as takeout to those who bring their own pots.
The Rassa Paniccia tradition has been organized in its current form since 1947, though it draws upon much older customs common throughout the Valsesia. It is one of the most cherished events in the local Carnival calendar, capable of gathering the entire community around the steaming cauldrons for a morning of celebration, warmth, and sharing.
The Rassa Carnival is not limited to the Paniccia. The period's events also include the Ballo della Giubiaccia, a dance evening held at the Municipal Theatre that highlights one of the most characteristic masks and traditions of the valley. Together with the distribution of the soup, it helps make the Rassa Carnival a small jewel of alpine folklore.

The 2026 Rassa Carnival Paniccia was held on Sunday, February 15. Preparation began around 5:30 AM, with the lighting of the fires under the large pots, culminating in the free distribution of the soup to the village residents and takeout portions.
The Rassa Carnival calendar also included the Ballo della Giubiaccia, a dance evening scheduled for Thursday, February 12, 2026, at the Municipal Theatre, with reservations managed locally.

Rassa can be reached by car by traveling up the Valsesia: from the Romagnano Sesia motorway exit (A26), continue towards Varallo and then along the Valgrande valley to the village. The nearest train station is in Varallo Sesia.
Preparation of the Paniccia begins at dawn, around 5:30 AM; distribution takes place in the late morning. The soup is offered for free; those wishing to take some home may bring their own pot.
