The charitable soup of the Valsesia Carnival in the small village of Vocca
In the heart of Valsesia, perched at an altitude of just over 500 meters along the Sermenza valley, the small village of Vocca (Vercelli province, Piedmont) preserves one of the most beloved traditions of the Alpine winter: the Paniccia. The Paniccia is a soup that is only poor in appearance: a rich and hearty vegetable and rice stew, enhanced with meat, cured meats, and bread. The traditional recipe includes carrots, celery, onions, cabbage, leeks, beans, potatoes, tomatoes, bacon, and ground beef, all bound together by rice (usually a high-quality round-grain variety). The dish is simmered for hours in large cauldrons and served piping hot. The name derives from the local dialect term "paniscia" and is related to the panissa of Vercelli and the paniscia of Novara, sharing the same rustic, peasant roots.
What makes the Paniccia special is not just its flavor, but its charitable spirit. According to Valsesian tradition, the soup was once prepared to feed the poor and, after being blessed by the parish priest, distributed for free to anyone who arrived with their own pot. In Vocca, as in other villages in the valley, the distribution remains a communal gesture: volunteers at work since the early morning, carnival masks, local authorities, and the entire village gathered around the steaming cauldrons. It is the most authentic sign of mountain culture, built on sharing and hospitality.
The Paniccia is not unique to Vocca: the entire Valsesia region experiences Carnival to the rhythm of panicce and busecche, with dates staggered between late January and Shrove Tuesday in the municipalities of Varallo, Borgosesia, Quarona, Scopa, Piode, Balmuccia, Boccioleto, Alagna Valsesia, and many others. Each village has its own committee and slight recipe variations, but all share the same spirit of popular celebration. Vocca is located in Valsesia, along the road that climbs the Sermenza valley. By car: A26 motorway, Romagnano Sesia-Ghemme exit, then the SP road towards Varallo and continue towards the valley. The nearest train station is Varallo Sesia, which is connected by local bus lines.
